I love when my food is full of color. If you're like me (a visual eater) than you will LOVE what I've got on the menu today: GRILLED CHICKEN GREEK SALAD.
After our move, Wade and I quickly learned that there are ZERO truly greek restaurants in the Rio Grande Valley. The ones that claim to be greek use Italian dressing on their Greek Salad. Enough said.

Living our lives on a mission is all about knowing and glorifying God, serving others, and living our lives, well, on a mission to make the most of Him!
For me, that includes what and how I eat, and often who I eat with. The table is a place for community. Maybe you need a little "me" time. Make yourself a delicious meal and sit-down without the TV! Feed your family, your friends, your neighbors.
Plus, it tastes REALLY REALLY GOOD.
Your favorite salad mix (I like to toss Spring Mix and a little Garden Iceburg together for color and texture)
Boneless, Skinless Chicken tenderloins
Red Onion, chopped
Sliced Greek pepperocini (from a jar)
Crumbled Feta cheese
Your favorite greek dressing
OR mix the following:
1/2 cup olive oil
6 TBLS red wine vinegar
3 TBLS dried oregano
2 tsp salt
Also picture: Naan. Find it in the bakery of your local grocery story. Sprinkle with a little water and warm in the oven for a few minutes. It's our favorite thing we ate in India and thought it'd be ok to mix the cultures just this once ;)
1. Heat your grill over medium heat.
2. Rub chicken with olive oil and season with pepper and a little salt. Grill chicken until the middle is white.
3. Combine ingredients, toss and enjoy! Don't you love how simple salads can be?
