Not only is this dish beautiful, but it is seriously delicious.
And while it's a vegetarian dish, but my husband didn't feel gipped at all with these hearty flavors.

This is one of those dishes that make you feel all warm and cozy, and also feel good about what you're eating.

*Confession: I literally started eating mushrooms about 2 weeks ago. Before that I swore I "didn't like them." Turns out I was wrong! Now I can't get enough! So, if you're like me, don't let them turn you off. Try it! You never know.

I served this meal up with a side of sautéed green onions which I'm also currently obsessed with. You can also make these on the grill which I maybe prefer a little more.

To Sautee:
Chop off the top few inches of the stalk so they fit in your pan. Heat a tbs of olive oil to a pan over medium heat. Add the green onions with the very tips sliced off. Sauté and turn until tender (about 10 minutes)

To Grill:
Prepare the grill with cooking spray. Heat the grill and add the green onions, turning every few minutes until tender.

To Eat: (cause some people really might not know)
Grab the stalk like a caveman and start chomping on the white part. Then, get ready for some awesome flavor. ;) **only eat the white/light green.

*Side story: As I set the table and snapped the last photo, expecting my husband to get home from work at any moment, my phone rang. It was Wade. He had been rear-ended and the car was undrivable. The other party was uninsured and it was just a general mess. I went to meet him and we returned home an hour and a half later. And ya know what? The meal was still warm and DELICIOUS. I didn't even re-heat it. We sat right down and dug in. That's a sign of a good meal, y'all.
